This year there will sadly be no dawn services or marches - whilst we cannot physically remember our fore-bearers today, they are in our prayers.
In memory, why not bake a big batch of these beauties today and have them with a traditional “gunfire breakfast” (coffee with rum added).
ANZAC BISCUITS
Makes 20-22 cookies
300g plain flour
180g rolled oats
170g desiccated coconut
200g brown sugar
110g caster sugar
250g unsalted butter
60g golden syrup
60g water
5g bicarbonate of soda
Combine the flour, oats, coconut and sugars in a mixing bowl. In a sauce pan over a medium heat, add the butter, golden syrup and water. When the butter melts and the mixture is smooth, stir in the bicarbonate of soda. Add the wet to the dry mix and combine well. Roll into balls of 50g and place on a lined baking or non- stick baking tray. Bake at 160c for 12-14 minutes, until golden brown. Remove from oven and allow to cool completely before touching.
